Here are the critical numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

Package: All orders will ship, vacuum sealed, frozen, from our Ranch in Strasburg, Colorado in a Styrofoam insulated box with dry ice. Orders will be delivered frozen or very cold to the touch, depending on the time in transit.
All items are vacuum sealed and shipped in cardboard boxes with Green Cell Foam insulation. Green Cell Foam is a compostable, biodegradable alternative to Styrofoam, and a more environmentally-friendly way to ensure safe delivery of your order.
